We all have times when we prepare too much and end up with the hated leftovers that most likely go to waste. Well why not use them in some other delicious recipes? Enjoy!
Ham Salad Spread (leftover ham):
3C ground cooked ham 2 tsp finely chp’d onion
1 hard cooked egg 2 tsp sweet pickle relish
2 Tbl finely chp’d celery 3/4 C may
1 Tbl prepared mustard
mix all ingrediants together well – chill and serve on crackers
Cranberry sweet and sour dipping Sauce (leftover cranberries):
Mash 1/4 C jellied cranberry in a saucepan over medium heat till
melted and smooth….Whisk in 1/4 C sugar, 1/4 C wht vinegar and
a dash of soy sauce…bring to a boil and reduce to medium heat simmer
whisking till sugar is completely dissolved and sauce reduces and thickens
slightly (apprx 10 min)… Remove from heat – serve with favorite spring
rolls, egg rolls, meatloaf, ham, ect.
Fried Potato Balls (leftover potatos)
Mix together together…2Tbl Milk, salt (to taste), 1/2 tsp pepper,
1/2 tsp chp’d green onion, 2 egg yolks (beaten), 2 Tbl flour…Chill
Later shape into balls… Beat 1 egg and dip balls in egg then roll in bread
crumbs. Fry in 1/.2 inch (peanut) oil.
STUFFY: (lelftover turkey/chicken, dressing, cranberrie and gravy)
start with 4 Hoagie rolls split lengthwise and spread mayo on each half
Layer on one half of each roll 1/4C shr’d turkey or chicken, 1/4 C stuffing,
2 Tbl gravy, and 2 Tbl cranberry sauce place other half on top and wrap in alum.foil
Place in oven 350 and 1 pkg (32oz) for apprx 15 min or till heated through. Serve
NOTE: may want to substitute cranberry sauce with any sauce of your choice.

Chicken or Turkey Taco Soup:
Over medium heat, heat 1Tbl cornola oil…Add 1 1/2C frozen corn heat till thawed…Add
1 can (16oz) low sodium pinto beans (rinsed and drained), 1 can (10oz) ro-tel@ (drained),
1pkg 30% reduced sodium taco seasoning… stir… Add 1 pkg (32oz) reduced sodium
chicken broth… cover and bring to a boil. Add 2 1/2 C chp’d turkey reduce heat and simmer
about 10 min. Serve with sour cream and or cheese (suggestion: shrd’d cheddar)
