I love easy-to-make recipes! My schedule is quite busy and I often need quick meals that I don’t have to think too hard about. I’m happy when I can find one that I can leave in the crockpot on the “warm” setting so my husband and son can help themselves when I’m away at meetings, too. This is a recipe that came together out of a need for something different that tasted good and was quick and easy.
Ingredients:
- 1 16 oz. jar of mild Ortega salsa
- 1 lb. ground turkey
- 1 can of black beans
- 1 bag of Uncle Ben’s microwavable brown rice
- Tortilla shells
- Shredded cheese
Directions:
Cook the ground turkey. Add the black beans and salsa. Heat the rice in microwave and add to mixture. Keep in crock pot on warm or serve immediately. When serving, spoon mixture into a tortilla shell and top with cheese. Roll the tortilla shell and EAT!
